Pork Spare Ribs

Spare ribs come from the middle to end of the pig’s rib cage, off the belly. You may see them available in two styles – St Louis or complete. St. Louis style spare ribs have had the cartilage trimmed and are more even, slightly smaller and easier to serve direct from cooking. Spare ribs are best marinated, barbequed, and slow roasted.
