Pork Collar Butt
Also known as pork scotch or pork shoulder, this cut comes from the upper part of the forelimb or the shoulder of the pig. This cut is available bone in (collar butt in) or as a boneless shoulder roast (collar butt out). This naturally tougher cut is best cooked via slow roasting. It is well suited to overnight marinades, and is typically served as pulled pork.
